WA Grown Food Kit For Beets

In Washington State, beets are available throughout the year, but the peak harvest season (when you can find fresh beets with greens) is usually between May and September.

Beets can be found in a variety of shapes and colors. A deep red, rounded beet is the most common, but you can also find golden beets and pink-and-white striped beets, a variety called Chioggia! Try them all to find your favorite!

Also, don't forget to try beet greens!  They are an excellent source of vitamins A and C, potassium, and magnesium. Chop and sauté the greens; serve them plain or with garlic and a squeeze of lemon juice.
